My mom got this recipe from a neighbor a few years ago. Originally it has an entire onion diced up in it. I prefer it without onions, but if you would like to add the onions when you cook your chicken, go ahead!
This is a picture before it was cooked...I am in such a rush to get all the hungry bellies in this house fed that I often forget to take the after pictures!
Ingredients:
1 can cream of chicken
1 can cream of mushroom (I do 2 chicken, no mushroom)
1 3/4 cups of chicken broth
1 can rotel, drained
12 small tortillas, cut into bite size pieces
2 lbs cooked chicken, cut into bite size pieces
1/4 cup chopped/diced onion (I omit this because I'm not an onion fan)
2-3 cups shredded cheese
Directions:
*Combine both soups with the chicken broth and can of rotel.
*Mix the remaining ingredients into the soup mixture and stir well.
*Pour into a round or square baking dish and bake at 350 for 45 mins to 1 hour.
*Serve with tortilla chips

Tastes Expensive Pasta
I tried this for the first time last week and it was DELICIOUS! Nick and I both loved it!!! It really does taste like an expensive pasta, yet it is so easy to make!
Ingredients:
2 cups uncooked rotini pasta
1/2 lb Italian sausage (by the brats in the store)
1 (6 oz) pkg baby spinach leaves
1 can Italian-style diced tomatoes, undrained
1 cup mozzarella cheese, shredded
2 tbsp grated Parmesan cheese
Directions:
*Cook pasta
*In pan, cook sausage until done. Add tomatoes and stir well. Add the bag of spinach leaves to it. Cook for about 2 mins (the spinach leaves will begin to shrivel up).
*Mix pasta with sausage sauce, stir well, serve!

Catalina Chicken
I got this recipe from a family friend about 8 years ago. I have been cooking it ever since. It has a sweet and mildly tangy flavor to it. I don't like cranberries OR catalina, but I love this recipe! I often serve it with potatoes. Kraft now has this recipe on their website...

1 jar cranberries (whole in sauce)
1 small bottle catalina salad dressing
1 package onion soup mix
Directions:
Mix all ingredients together in a glass baking dish and bake at 350 for 1 hour (uncovered).
*YES, its that easy!

Who Am I?
I recently made a family blog and thought I would add recipes I make to it. After thinking about it for I decided to just go ahead and have two separate blogs. Why try to combine two totally different things? I have some friends who only want my recipes, and some family who only want to know about how the family is doing! So here it is...recipes I make and like. These are recipes that I make, or have made, for my family of 4. I have a husband (who can be picky), and two small boys (who are also picky at times). These all have the Mommy stamp of approval! Take them and try them out for yourself! Let me know what you like and feel free to share some of your recipes!
(Quick note...All recipes I cook are easy to do, with basic ingredients. I HATE a recipe you don't know half the items in it!)
